Oven Roasted Rainbow Trout
When you’re looking for a wholesome dinner that feels special without requiring hours in the kitchen, this oven-roasted rainbow trout dinner is an easy choice. Featuring tender Rainbow Trout, sweet roasted vegetables, hearty wild rice, and a silky honey-Dijon butter sauce, this one-pan meal brings together a delicious balance of savory, sweet, and smoky flavors.
Rainbow trout is a wonderful fish for simple weeknight meals. Its delicate texture and mild, slightly nutty flavor pair beautifully with bold seasonings without being overpowered. Here, a simple blend of smoked paprika, garlic powder, salt, and black pepper creates a flavorful crust as the trout roasts alongside the vegetables.
If rainbow trout isn't available, you can substitute another flaky fish:
Salmon – Richer and more flavorful but works beautifully with the smoky seasoning and honey butter.
Cod – Mild and flaky, making it a great option if you prefer a leaner fish.
The vegetables are just as much a highlight as the fish. Delicata squash is one of the easiest winter squashes to prepare because its thin, edible skin means there’s no need to peel it. Simply halve the squash, scoop out the seeds, and slice it into half-moons. When roasted, the squash becomes tender with beautifully caramelized edges. Coarsely chopped red onion adds savory sweetness, while dried cranberries provide little bursts of chewy, fruity flavor.
The roasted vegetables can easily be adapted based on what's in season:
Butternut squash – Use peeled, seeded, and cubed butternut squash in place of delicata squash.
Acorn squash – A great substitute with a similar sweet, nutty flavor. The skin can also be eaten when roasted.
Sweet potato – Cubed sweet potato adds extra sweetness and pairs especially well with the honey butter.
Carrots – Slice into thin rounds or sticks for a simple, colorful alternative.
Brussels sprouts – Halved Brussels sprouts add a savory, caramelized element.
Yellow onion – Substitute for red onion if that's what you have on hand.
The best part of this recipe might just be the honey butter sauce. While the trout and vegetables roast, gently melt salted butter in a small saucepan, then whisk in honey and Dijon mustard. The result is a rich, silky sauce with just the right combination of buttery richness, sweetness, and tang. Drizzled over the trout and wild rice, it brings all the components together.
This colorful meal is perfect for a cozy fall or winter dinner, yet it’s simple enough to make any night of the week. With minimal prep, one baking sheet, and a handful of flavorful ingredients, you can have a nourishing seafood dinner on the table in about 30 minutes.
