2 portions Sizzlefish Colossal Shrimp, thawed
1 inch piece of ginger, peeled and sliced
1 small cinnamon stick
1/4 tsp fennel seeds
2 star anise pods
1/4 tsp black peppercorns
5 cups vegetable or seafood stock
6 ounces dry Vermicelli noodles
Hoisin sauce
Garlic chili sauce
Bean sprouts
Fresh cilantro
Lime wedges
Sliced jalapeño pepper
For Serving
Directions
Heat a medium pot over medium-low heat.
Add cinnamon stick, fennel seeds, star anise and peppercorns. Toast spices for 2-3 minutes, stirring frequently until fragrant.
Add ginger and stock. Bring to a boil over medium heat. Reduce heat to low and simmer for 10 minutes. Strain stock into a large bowl and discard spices. Return stock to pot over medium-low heat.
Add shrimp and bring to a simmer. Cook 5 minutes longer. Cook vermicelli noodles according to package directions. Divide noodles between bowls and ladle stock and shrimp on top.
Top with bean sprouts, jalapeño slices, cilantro, lime wedges, hoisin sauce and garlic chili sauce. Enjoy hot.
