Shrimp and Bison Sweet Potato Nachos are a great healthy snack or appetizer that is quick and easy to make. It is also a great gluten-free option that helps promote good cholesterol. It's also delicious and flavorful, made with Sizzlefish wild gulf shrimp.
Ingredients

1 medium sweet potato (150g), thinly sliced
- 4oz SizzleFish Shrimp (1 pack)
- 3oz D'Artagnan Bison

2 tsp BBQ seasoning
-
1/2 avocado, diced

1 tbs peach bbq sauce

1/2 oz cheese, shredded

2-4 tbsp fresh pico de gallo

fresh lime, if desired
Directions
Preheat oven to 400°F
Toss potato slices with ghee, olive oil, or coat with non-stick spray
Bake for 15-20 minutes, flip, and bake an additional 15 minutes*
While potatoes are baking, sauté ground bison with BBQ seasoning
Add shrimp to the pan and cook until opaque
Cut shrimp into desired-size pieces
When potatoes are done, top with ground bison, shrimp, pico de gallo, shredded cheese, diced avocado, and finally some peach BBQ
Finish off with a squeeze of fresh lime juice, if desired
Serve immediately!
