Loaded Greek Shrimp Salad
Serves: 1
Ingredients:
- For the salad:
- ½ cup shrimp
- 3 cups chopped romaine lettuce
- 1 cup diced cucumber
- ¼ cup grape tomatoes
- ½ cup diced green bell pepper
- 2 tbsp feta cheese
- salt & pepper to taste
- ¼ tsp dried marjoram
- ¼ tsp dried basil
- ½ tsp dried oregano
- For the dressing:
- 1 tbsp balsamic vinegar
- ½ tbsp extra virgin olive oil
- ½ tsp dried marjoram
- ¼ tsp dried basil
- ½ tsp dried oregano
- salt & pepper to taste
Preparation Instructions:
- In a small bowl, whisk together the ingredients for the dressing and set aside.
- Heat a grill pan over medium heat with cooking spray. Combine the salt & pepper and spices in a bowl and toss the shrimp in the bowl to coat. Place the shrimp on the grill pan. Cook 2-3 minutes on each side until opaque. Pro tip: remove shrimp 30 minutes from refrigerator prior to cooking.
- Remove shrimp from the grill and set aside to rest while you assemble the salad.
- Assemble the salad by adding all the vegetable ingredients first to a bowl. Next top with shrimp, feta and drizzle with dressing.
