Wild caught shrimp are an excellent source of iodine, essential for heart and thyroid function. Our shrimp are also a high in heart-healthy omega-3 fatty acids. Extra-large shrimp like colossal can be enjoyed as an appetizer or make a protein-packed meal served with a side of vegetables of rice.
Ingredients

2 portions Sizzlefish colossal shrimp
2 eggs
2 tbsp all-purpose flour
1 cup sweetened coconut flakes
1/2 cup Panko breadcrumbs
1/2 tsp salt
1/2 tsp black pepper
Cooking oil spray
2 tbsp chopped green onion
Sweet Thai chili sauce for serving
1/4 tsp cayenne pepper, optional
Directions
Remove any pieces of ice from shrimp and discard. Beat eggs in a small bowl. Combine coconut flakes, panko breadcrumbs, flour, salt, pepper and cayenne pepper in a second bowl.
Dip each piece of shrimp in egg holding onto the tail. Next, dip in coconut mixture and use opposite hand to press coating onto shrimp.
Place in basket of air fryer and mist with cooking oil spray.
Air fry at 370ºF for 10-12 minutes. Repeat with remaining shrimp.
Serve hot garnished with green onion and serve alongside Thai chili sauce for dipping.
Recipe Note
Another terrific part of this recipe is there is no thawing required. That’s right, the shrimp is dredged in a coconut panko breadcrumb coating and air fried from frozen. While it is perfectly fine to use thawed shrimp in this recipe, cooking shrimp from frozen eliminates the wait time of thawing, meaning you can grab a package of shrimp and make it whenever a craving strikes.
