They are dry pack scallops, meaning they are shucked and then frozen "unprocessed" (not soaked in a water and preservative solution before freezing). This ensures you get only pure, natural, wild scallops. This will all help you achieve that nice crispy exterior while keeping the inside juicy and succulent. Something else worth mentioning is that sea scallops are healthy! Wild sea scallops are a low-calorie source of protein. They provide a surprisingly high amount of omega-3s, as well as important vitamins & minerals like vitamin B12 (which can help prevent anemia, depression, fatigue, and memory problems, selenium (which acts as an antioxidant), and zinc (which helps to maintain a healthy immune system and heal wounds). Think of these scallops as a healthy indulgence.
Now we should talk about how to prepare sea scallops. Make sure you dry your scallops really well with paper towels before you start preparing this recipe. Once you’ve dried the scallops, you are going to give them a nice bath in a delicious mixture of melted butter, olive oil, garlic, lemon juice, and dill. Then you will place them in the basket of your air fryer, leaving space between the scallops to allow the air to circulate around the scallops. You will get a varying amount of color on your scallops, but make sure you don’t go too far with them or they will be tough. You will need to work in batches if your air fryer is small. 1 TBSP Olive Oil
2 TBSP Butter, melted
4 Garlic Cloves, minced
3 TBSP Lemon Juice
2 TBSP Chopped Fresh Dill
Kosher Salt, to taste
Fresh Ground Black Pepper, to taste
2/3 cup Sour Cream
1 TBSP Stone Ground or Dijon Mustard
1 Garlic Clove, minced
¼ cup Chopped Fresh Dill
1 tsp Lemon Zest
2 tbsp Lemon Juice
Kosher Salt, to taste
Fresh Ground Black Pepper, to taste

Directions
Place the scallops, olive oil, butter, garlic, lemon juice, dill, and salt and pepper in a large bowl. Mix well.
Next, place the scallops in a single layer in the basket of your air fryer, leaving space between the scallops for air to circulate.
Cook the scallops at 400 degrees for 6-8 minutes or until the scallops reach an internal temperature of 120 degrees.
While the scallops cook, add the sour cream, Dijon mustard, minced garlic, lemon juice, lemon zest, salt and pepper to a small mixing bowl. Stir to combine.
