Smoked Salmon & Lentil Breakfast Salad
This simple, no-cook meal is packed full of protein, high-fiber lentils, smoked salmon and fresh vegetables. It comes together in less than 5 minutes. Gluten Free
Ingredients:
- 1 package steam fresh lentils
- 2-3 cups baby spinach
- 1/4 small onion, sliced
- 2 small tomatoes, sliced or chopped
- 4 oz smoked salmon
- capers, if desired
- 1 tbs dijon mustard
- 2 tbsp avocado oil
- 2 tbsp white balsamic (can sub regular)
- 1 tbsp lemon juice
- salt & pepper, if desired
