Pistachio Crusted Honey Mustard Salmon
Ingredients
- a pinch of salt & pepper
- 1/2 tbsp spicy brown mustard
- 1/2 tbsp ghee
- 1/2 tbsp honey
- a pinch of garlic powder
- 1/2 tsp dried parsley
- 1 1/2 tbsp chopped pistachios
- 1 salmon filet
Method
Season salmon with salt & pepper on both sides. Mix mustard, ghee, honey & parsley in a small dish to combine. Spread evenly atop salmon. Sprinkle pistachios over spread mixture, lightly press pistachios into spread. Add a pinch of garlic & bake at 400 degrees for 10 minutes over avocado oil spray (or spray oil of your liking!)

This was really good, I doubled it for two of us and reduced the ghee and nuts to reduce calories/fat but it was still very good. I wasn’t sure about honey mustard with salmon so it was a nice surprise.thanks
