If you are frustrated and tired of fish sticking to the grill, have no fear, the cedar planks take all of that away. Also, along with giving you a bit of security, the cedar planks offer a wonder flavor to the salmon. It’s a win win!
Now that we have discussed the recipe, let’s talk a bit about nutrition and why salmon is a healthy choice. Salmon is a species that consistently delivers very levels high of omega-3 fatty acids and is packed with protein. Why leave the skin on, you might ask. We leave the skin on the bottom of our salmon fillet portions for two reasons: First, some of the highest omega-3 levels are found in the flesh along the central "fat line" next to the skin. Second, cooking this delicate fish with the skin side down as it finishes will help keep it moist throughout for a perfect presentation. As you finish cooking, you can easily separate the skin from the fillet as you remove it from the pan or grill.

4 Sizzlefish Salmon Fillets
2 TBSP Olive Oil
1 TBSP Stone Ground Mustard
2 TBSP Lemon Juice
1 TBSP Lemon Zest
2 tsp Finely Chopped Fresh Rosemary
2 Garlic Cloves, minced
½ tsp Salt
¼ tsp Freshly Ground Black Pepper
Cedar planks for grilling
Lemon Wedges, for serving
Water for spraying grill flames
Directions
Submerge the cedar planks in water and soak for at least 1 hour, up to 2 hours.
Combine the olive oil, mustard, lemon zest, rosemary, garlic, salt, and pepper in a 9 x 9 baking dish; mix well. Next, add the salmon to the dish and turn to coat evenly in the marinade. Cover and refrigerate for at least 30 minutes or until ready to grill.
Preheat the grill to medium-high heat (400°F to 450°F).
When ready to grill, pat the soaked cedar planks dry and place the marinated salmon filets on top. Place the planks on the heated grill grates and cover. Allow the filets to cook for 10 to 15 minutes, or until salmon reaches an internal temperature of 145˚F. Serve the salmon with fresh lemon wedges.
