Directions
In a medium bowl whisk the fresh lemon juice, Dijon mustard, olive oil, chopped parsley, minced garlic, salt and pepper; mix well. Set aside 2 tablespoons of the marinade for after cooking.
Pat the salmon dry and place the fillets in a dish with sides. Pour the marinade over the fillets, coat well, and allow to marinate for 30 minutes and no more than an hour.
Preheat the grill to medium, 375°-400°F. Clean and oil the grates of the grill and carefully place salmon fillets skin side down onto the grill.
Cover the fillets and grill 6 to 8 minutes or until salmon is cooked through and reaches an internal temperature of 145°F.
Once cooked through, brush remaining 2 tablespoons of the marinade mixture over salmon. Serve warm garnished with fresh parsley and lemon wedges.
