Coho Salmon With Roasted Grapes
Roasting grapes brings out their natural sweetness which compliments the rich Coho Salmon. To save time, we roasted both the salmon and grapes at once. An easy, gluten-free meal, ready in less than 15 minutes.
Prep Time: 5 minutes
Cook Time: 15 minutes
Serves: 2
Ingredients:
2 pieces Coho Salmon
1 cup red grapes
2 tbs olive oil
salt & pepper, as desired
fresh thyme
Sides, optional (shown here mashed cauliflower and roasted brussels sprouts)
Method:
1. Preheat oven to 400 degrees F.
2. Place salmon on a parchment lined sheet pan.
3. Add grapes to the sheet pan.
4. Drizzle with olive oil and season with salt and pepper.
5. Bake for 12-15 minutes or until salmon is cooked as desired
6. Serve with favorites sides.
7. Top with fresh thyme.
