4 portions Sizzlefish mahi mahi
1/2 tsp salt
1/4 cup chipotle en adobo sauce, sauce only
2 tbsp lime juice
1 tbsp brown sugar
Limes for serving
1 cup chopped ripe peaches
1/2 cup chopped tomato
1/4 cup chopped red onion
1/4 cup chopped cilantro
1 tbsp minced jalapeño
1 tbsp lime juice
1/4 tsp salt
For Chipotle Lime Mahi Mahi
For Peach Salsa
Directions
Blot mahi mahi with paper towel to remove excess moisture. Season with salt. Stir together chipotle sauce, lime juice and brown sugar.
Spoon half of chipotle lime sauce on mahi mahi. Spray basket of air fryer with cooking oil and place 2 mahi mahi in basket. Air fry for 6 minutes at 390ºF.
Top with an additional spoonful of chipotle-lime sauce and continue to air fry for 4 minutes longer. Repeat with remaining mahi mahi.
While fish cooks, stir together ingredients for peach salsa.
Serve mahi mahi hot topped with peach salsa.
