Why Cook This With Pistachios?
Pistachio nuts are lower in calories than most nuts and pack antioxidants, fiber and omega 3 fatty acids into each nut. In this recipe, pistachio nuts are used as a breading to create a crunchy texture on red grouper as it bakes. The pistachios are pulsed in a food processor with dried thyme, garlic and salt to create a fine consistency like breadcrumbs.

Red grouper has a slightly sweeter, milder flavor compared to its black grouper counterpart. Red grouper is an excellent source of quality protein. Each box of red grouper contains individually vacuumed packaged portions, each weighing between four and five ounces. They do NOT contain skin.
How We Keep It All Together!
To add flavor and help the pistachios and herbs adhere to the grouper, a thin layer of mayonnaise is first brushed on the fish. An avocado based mayonnaise is ideal for its healthy fats. Once coated, the fish is baked at 375ºF for 15 minutes, until the center is cooked through, and the coating is golden brown.
Ingredients

4 portions Sizzlefish grouper
3/4 shelled/unsalted pistachios
1 tsp dried thyme
1/4 tsp garlic powder
1/2 tsp salt
2 tbsp avocado-based mayonnaise
Lemon wedges for serving
Directions
Preheat oven to 375ºF and line a baking sheet with parchment paper.
Add pistachios, thyme, garlic powder and salt to a food processor and pulse until finely chopped. Transfer to a shallow large bowl.
Blot excess moisture from grouper with paper towel. Brush top and sides of grouper with mayonnaise. Press grouper into pistachio mixture to coat on top and sides.
Place on baking sheet. Bake for 15 minutes or until fully cooked.
Serve hot with lemon wedges.
Recipe Note
Serve alongside sautéed green beans with plenty of lemon wedges for squeezing on fish.
