Ultimate Gluten Free Fish Sandwich
Halibut is lightly breaded, baked and served in a gluten free sandwich bread with layers of veggies and crispy bacon. A better than BLT meal!

Yield: 2 sandwiches
Ingredients
For the fish:
- 2 halibut filets, thawed
- ½ cup Gluten Free flour
- ½ tsp. paprika
- ¼ tsp. cayenne pepper
- ½ tsp. parsley
- ½ tsp. garlic powder
- ½ tsp. salt
For the sandwich:
- 4 slices Gluten free bread
- ½ cup guacamole
- ½ yellow bell pepper, sliced
- 1 tomato, sliced
- 4 slices bacon, crispy
- 1/3 cup spinach
How to Make It
- Preheat the oven to 350 F. Prepare a baking sheet with parchment paper.
- In a bowl, mix together the gluten free flour, paprika, cayenne pepper, parsley, garlic powder and salt.
- Use a kitchen scissors to cut the skin off the halibut.
- Place each halibut filet, one at a time, in the bowl with the flour mixture. Cover the filet generously and pat it on the fish with your hands.
- Place the filets on the prepared baking sheet.
- Bake at 350 F 20-25 minutes until the fish is golden brown. If baking the bacon at the same time as the fish, cook 5-7 minutes on each side at the same temperature as the fish.
- Remove the fish from the oven.
- Assemble the sandwiches by placing the sliced bell pepper on the bottom, then the sliced tomato, spinach, bacon, baked fish and guacamole.
