Since this is a one-pan meal you'll spend less time cleaning up afterwards and more time talking about how good it was. Just take 10 minutes to get everything prepped and then its just 20 minutes too cook!
Ingredients

3 Sizzlefish cod fillets, defrosted
2 teaspoons olive oil, divided
3 cloves garlic, minced
1 pint cherry tomatoes, sliced in half
¼ cup dry white wine
½ cup chopped basil
2 tablespoons lemon juice
2 teaspoons lemon zest
Salt and pepper to taste
Directions
Heat one teaspoon of olive oil in a skillet over medium heat. Add the garlic and sauté until fragrant.
Add the cherry tomatoes and cook until soft, about 5 minutes.
Add the white wine, basil, lemon juice, and lemon zest. Let the sauce come to a simmer and cook for two more minutes.
Transfer the sauce to a bowl and add remaining oil to the pan. Season the cod with salt and pepper and cook for about 5 minutes.
Flip the cod, pour the sauce over top and cook another 3-5 minutes until done.
